I used my Ninja Foodi the other night to air fry some chicken breast. This cooker is absolutely AMAZING! I seriously can’t say enough about the Foodi.
It makes meals super fast.
One pot and done if I want.

Anyway, back to the Cucumber Avocado Chicken Salad.

I cooked up some chicken breasts and had them heavily seasoned with black pepper, onion and garlic powder, and paprika. Which I find to be a key roll in this new recipe.

I diced the Cucumber, Chicken, Onions nice and small.

Then weighed all of my ingredients out using my AmazonBasics Food Scale.

The food scale gets the most use in my kitchen. I like to weigh everything out to get the best picture on my macros. I have even found that measuring ingredients out for baking goodies makes for a better quality product.

The greek yogurt, Avocado, Lemon, and spices all go into the food processor and spun around until nice and smooth.

Then the yogurt-avocado mixture goes into a bowl with the chicken and veggies to then get stirred well and weighed out as a whole. To then divide into individual portions.

This recipe here serves 4.

Best part about this recipe is that you can use it many ways throughout the week!

Portion it out and eat it by itself as a quick snack in between meals. The healthy fats from the avocado will help keep you feeling satisfied until your nest meal.

Use one serving throughout the week as a snack. Use sliced veggies or whole wheat crackers and scoop the mixture up.

Top off some chunked up bell pepper with the chicken salad.

Or add it to the top of a green garden salad to make it a bigger meal.

Use It In A Wrap

Lay out a tortilla wrap, spread out one serving of the chicken salad, and add some other veggies like spinach, bell pepper, or even more cucumber to make a delicious lunch or dinner.

  • 1/2 Cup Cucumber (Finely Diced)
  • 1/4 Cup Onion (Finely Diced)
  • 1 Whole Avocado
  • 9.5 Oz Chicken Breast (Cooked and Seasoned Well – I used black pepper, Onion and Garlic Powders, and Paprika.)
  • 2/3 Cup Plain Greek Yogurt
  • 1 TBSP Lemon Juice
  • 1/8 – 1/4 TSP Chili Powder
  • To Taste Salt And Black Pepper
  1. Dice the veggies and chicken.

  2. Add Greek yogurt, Avocado, Lemon, and Spices to a food processor and blend well, until smooth.

  3. Comine all ingredients together in a seperate bowl and eat at your pleasure.

  4. Keep leftovers in an air tight container in the refrigerator.
